The gastronomic calendar of Terras de Santiago is a living reflection of the identity and traditions of its eleven municipalities. Octopus, filloa pancake, wine-cooked chorizo, lamprey and empanada festivals share the stage with autumn fairs and parish festivities that celebrate local produce throughout the year.
